Place a small skillet on medium heat with 2 tablespoons butter, then toss in 1 teaspoon minced garlic, stir for about 30 seconds and throw in bread crumbs. Saute for about 3-4 minutes or until fragrant. Lightly season with salt and pepper, if desired. Then top the mac and cheese with the bread crumbs and bake.
The key to this recipe is to use water and evaporated milk in one pot to cook the noodles. Once the noodles are cooked to al dente, instead of draining them, you’ll just stir in the cheese until it melts.

Over the years, I have always loved baked mac and cheese, but didn’t love the recipes I found online. I would ask some of the cooks that I looked up to if they could share there recipes, and I just molded it to make it my own. So, I encourage you to do the same.
Don’t over-stir the sauce once the cheese has melted. Add the noodles and quickly assemble in pan and put into the oven.
Make the filling: Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese and granulated sugar together on medium-high speed in a large bowl until the mixture is smooth and creamy, about 2 minutes. Add the lime juice, sour cream, vanilla extract, and lime zest then beat on medium-high speed until fully combined. On medium speed, add the eggs one at a time, beating after each addition until just blended. After the final egg is incorporated into the batter, stop mixing (my review here). To help prevent the cheesecake from deflating and cracking as it cools, avoid over-mixing the batter as best you can.
The evaporated milk is the key ingredient. It really makes for a rich and creamy mac and cheese. Plus I love that it is shelf stable. FYI- I find it tastes just as good in coffee as half-and-half.

I start this recipe by boiling a pot of salted water. This will add to the seasoning of the noodles so, they won’t taste bland.

I won’t deny it: after destroying my twelfth batch of cheese sauce, I’ve seriously considered buying sodium citrate and making this nightmare go away. Both sodium citrate and sodium phosphate are chemicals and emulsifiers that can be found in things like ice cream, jams, and processed cheese—like Kraft’s—which prevents the fats and waters found in cheese from separating. I can’t make a cheese sauce to save my life. Once a dough forms, roll portions of dough into long strips, and use a knife to cut the strips into small, rounded rectangles. Cook the gnocchi in boiling water for 2-4 minutes before serving! This recipe can be doubled if your slow cooker is big enough. The cooking time may be a little longer, but not much.
